Alfalfa leaf (aka Chilean Clover, Buffalo Grass, Lucerne and Purple Medic) is known for its nutritious qualities. This flowering perennial is a member of the pea family and is cultivated worldwide. Alfalfa has been used as a culinary food in India, and as digestive support in Traditional Chinese Medicine (TCM) a healthful tonic in American folk herbalism. Organic alfalfa leaf can be infused as alfalfa tea, added to herbal vinegars, and incorporated into soups and stews. The sprouted seed is often eaten in salads and sandwiches. The leaves are a source for the dietary supplement chlorophyll, and the seeds are used to make a yellow dye. In parts of the world young alfalfa leaves have been served as a vegetable. The tastes are sweet, bitter, and earthy. It is energetically cooling. Dried leaf milled into powder can be made into capsules or herbal tablets, used in smoothies and soups, or infused as an herbal tincture.
A premium feed plant for livestock, it's fed to dairy cows, chickens and rabbits. Utilized in gardening and large-scale agriculture, it is a “nitrogen fixer” like many legumes, and helps to “heal” soil as well. Alfalfa makes an effective “green manure” for providing nutrients to poor soil.
