Sweet and sour chicken fried rice
• 1 lb Foster Farms Simply Raised Chicken Breast (or breast tenders) cut into very small bite sized pieces • 3 Tbsp vegetable oil, divided • Salt and pepper • 1 egg, lightly beaten • 2 green onions, diced – (dark green ends only) • 1 red bell pepper, diced • 1 carrot, diced • 3 cups of cooked brown rice • 1 cup of fresh pineapple chunks • For the sweet and sour sauce – • 1 tablespoon cornstarch mixed with 1 tablespoon water • 1/2 cup pineapple juice • 1/4 cup cider vinegar • 1/4 cup brown sugar • 2 Tbsp ketchup • 1 Tbsp soy sauce
